Chicken crusted with dried mushrooms

mushroom chicken

This is a cool recipe idea that I got from some fitness magazine. There are no bread crumbs or carbs in the chicken and it tastes delicious.
Ingredients:
Chicken tenderloins
2 eggs
2 cups of DRIED mushrooms
Basil, salt, pepper, parsley flakes
3 tbsp olive oil

Instructions:
1. In a large bowl combine olive oil with basil, parsley flakes, salt and pepper
2. Cut chicken into 2 inch chunks and place in bowl with olive oil mixture
3. Allow to marinate for 30-40 min at room temperature
4. Take dried mushrooms and put them into blender or coffee grinder and blend/grind them until they become powdered
5. Place the powdered mushrooms in a small bowl
6. In a different small bowl, break 2 eggs and mix
7. Once the chicken has marinated, heat a large skillet with 1 tbsp of olive oil
8. Dip each piece of chicken into the eggs mixture and then dip it into the powdered mushroom mix
9. Place pieces on skillet and turn the heat down ~3/10 and cover
10. After 2-3 minutes flip the pieces and cook another 2-3 minutes
11. This chicken has a delicate mushroom infused taste to it. Serve with your favorite veggies or rice
12. To make the tomatoes look like hearts (even though mine look more like butts) slice them diagonally and flip one of the halves to make a heart and secure with toothpick
Enjoy!
