Ingredients:
4 Red peppers sliced lengthwise
1 pack of ground turkey
1 egg
2 tbsp olive oil
Basil
Salt and pepper
1 tomato
1/2 clove of garlic
1 small can tomato sauce
Instructions:
1. Mix together ground turkey, about 2 tsps of basil, egg, olive oil, and salt and pepper and set aside to marinate for about 30 minutes at room temperature
2. Finely chop the tomato and mix with 1 tbsp basil in a small bowl
3. Mince the garlic and add to tomato and basil mix
4. Preheat oven to 350
5. Cut peppers in half lengthwise and remove all the seeds
6. Pour tomato sauce into baking dish and lay peppers flat on top of tomato sauce
7. Spoon the ground turkey into each pepper, filling it to the top
8. Place in oven for 15 minutes
9. After 15 minutes remove the baking dish from oven and spoon the basil/tomato/garlic mixture on top of each pepper
10. Bake for another 40 minutes (until turkey is cooked through and peppers are soft)
These come out very tender and flavorful!
*If you want to add rice/quinoa, cook 1 cup of it and add it to the marinated turkey after it has marinated for 30 minutes; You can also make whole peppers instead of halves*
