I made this for my dad in honor of father’s day 🙂
Ingredients:
1.5 cups of almond flour
1.5 cups of hazelnut flour
1/2 cup coconut oil and another 1/4 cup coconut oil
4 eggs
3 medium apples chopped into small 1″ pieces
2 medium peaches sliced
2 tsps. stevia
1 tsp cinnamon
1/2 cup of walnuts
Instructions:
1. In a large bowl mix together almond flour, hazelnut flour, 1/2 cup coconut oil and 4 eggs until the mix has a dough consistency. If it seems a little soft, place in fridge for 10-15 minutes
2. Grease a 9″ spring form dish with a bit of coconut oil
3. Using your hands line the spring form with dough on the bottom and along the sides to make the crust. Make sure you have about 1 cup of dough left over for the laced pattern on top
4. Preheat oven to 350
5. In a large bowl mix together apples, peaches, stevia, cinnamon, walnuts and 1/4 cup coconut oil
6. Place the fruit mixture into the crust
7. Use the remaining dough to form strips and place them crossed on top of the fruit
8. Place pie into oven for 30 minutes
9. Enjoy!
