French toast with warm berry sauce

French toast with a warm berry sauce

French toast:
4 pieces of bread
5 eggs
1/2 tsp of cinnamon
Pinch of salt
1 tbsp half and half

Berry sauce
3 cups of berries of your choice (I used sliced strawberries, raspberries and figs)
2 tsps sugar (add more if your berries are very tart)
4 tsps butter
3 tbsps plain Greek yogurt

1. Heat a pan and place butter in it
2. Once it’s warm add chopped fruit and sugar
3. Cool on medium/low heat for 10 minutes stirring frequently
4. Add yogurt and mix, leave on lowest heat setting
5. In bowl combine eggs, cinnamon, salt and cream
6. Spray another pan with PAM
7. Dip one piece of bread into egg mixture, let it soak up some of the egg mixture on both sides
8. Place on hot pan and change the heat to medium and cover. Flip after 2-3 minutes and cook for another 3 minutes, covered.
9. Repeat for remaining pieces of bread
10. Place one piece of French toast on plate and scoop the berry mix on top, place another piece on top and add more berries on top
