Ceviche!

Ok so in all fairness this is mock ceviche. The shrimp are cooked before, but it’s still delicious and if you don’t quite trust yourself to properly make raw seafood then this recipe is for you!

Ingredients:

  • 1.5 lbs of shrimp
  • 1/2 cup orange juice
  • 1/2 cup lime juice
  • 1/2 cup lemon juice
  • 1.5 medium sized tomatoes
  • 2 small/medium cucumbers
  • 1/2 red onion
  • 3/4 cup fresh cilantro
  • 1/4 cup serrano chiles
  • 1 medium avocado
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/2 teaspoon pepper

Instructions:

  1. Cook/steam the shrimp and chop them into about 1 cm pieces
  2. Place shrimp in medium/large bowl and pour in orange juice, lemon juice and lime juice
  3. Chop cucumber into 1/2 cm pieces and add to bowl
  4. Chop red onion into 1/2 cm pieces and add to bowl
  5. Chop Serrano chiles as small as you can and add to bowl
  6. Refrigerate for 1 hour
  7. Add finely chopped tomatoes, chopped avocado and finely chopped cilantro to bowl
  8. Add olive oil, then salt and pepper
  9. Let stand for about 30-40 minutes
  10. Serve with tortilla chips or whatever you like! Enjoy!
