Lemon basil chicken

lemon chicken

1 pack of chicken tenderloins cut into 1-2″ pieces
2 lemons
1 cup fresh basil
2 tsbps dried basil (spice rack)
1/2 cup olive oil
3 tbsp minced garlic
2 medium tomatoes
Salt and pepper

1. In a baking dish combine olive oil, dried basil, garlic, salt and pepper.
2. Cut one lemon into slices and squeeze the juice into the baking dish
3. Add chicken to the baking dish and mix it up well so it is coated with the marinade. Let it marinate for 20-30 min at room temperature
4. Preheat oven to 350
5. Thinly slice the tomatoes and place slices into the baking dish
6. Add fresh basil to the baking dish (on top of the chicken)
7. Thinly slice the lemon and place slices on top of chicken
8. Bake for about 20 minutes (cut a piece of chicken to check that its no longer pink inside)
9. Enjoy!
