Ginger salmon with goat cheese

This was a super random experimental dish that came out really delicious. I paired the salmon with a side of quinoa and shiitake mushrooms (the mushrooms will be a separate post under side dishes)

Fresh (not frozen!) salmon
2 tbsp. fresh ground ginger or ginger from the spice rack
2 tsbp basil
1/2 cup olive oil

1. In a baking dish combine ginger, basil, and olive oil and mix it
2. Add salmon to the baking dish and allow to marinate 10 minutes on each side
3. Preheat oven to 350
4. Bake for 15-20 minutes (depends on thickness, so cut into the thickest part to check)
5. Once salmon is ready scoop a bit of goat cheese on top of it, TURN OFF the oven and place it in the oven for 1 minute to let the cheese heat up a bit and melt
6. Enjoy with quinoa and shitake mushrooms, or other sides of your choice!
