Veggie and goat cheese omelet

veggie omelet

Ingredients:
2-4 eggs (depending on how many people you’re making this for)
10-15 cherry tomatoes (sliced in half)
1 yellow pepper sliced
2 tbsp of goat cheese
1.5 cups of spinach
Basil, salt, pepper, parsley flakes

Instructions:
1. Heat a skillet on high and toss sliced pepper on to it. Cover and turn heat to medium/low, stiring occationally
2. In a small bowl combine eggs, salt, pepper, parsley flakes and basil and mix
3. After the peppers have cooked for about 5 min, add tomatoes, after another 3-4 minutes add spinach
4. After all the veggies have cooked for another 5 min pour in egg mixture and cover
5. Allow omelet to cook for 5 minutes and sprinkle goat cheese on top
6. Cooking for another 2-3 minutes or until eggs are no longer runny
