Ingredients:
2 eggs
1 cup cottage cheese
2 tsps of Stevia
1 tbsps of flaxseeds
1/2 cup vanilla protein powder
Pinch of baking soda
1 tsp butter
1/2 cup chopped apples
Instructions:
1. Heat a medium sized skillet with a bit of butter
2. Mix all ingredients together in bowl and put in freezer for 10 minutes (these bake better when the batter is colder)
3. Using a spoon, scoop about 1 tbsp onto the hot skillet, lower heat to low and cover the skillet
4. Cook each pancake about 2-3 minutes then flip over and cook another minute
