Ingredients:
3 eggs
1 red bell pepper
Goat cheese
Basil
Salt
Pepper
Olive oil
Instructions:
1. Crack 2 eggs and mix in a small bowl
2. Add salt, pepper and basil to the mix
3. Heat a medium skillet with some olive oil
4. Cut a slice of the bell pepper and place in the middle of skillet
5. Take the third egg and break it directly into the pepper
6. Pour the remaining mixture around the pepper
7. Toss pieces of goat cheese and pieces of red bell pepper into the mixed eggs
8. Cover the skillet and set on low heat and cook for 10 minutes or until eggs are no longer runny
