Ingredients:
1 cup almond flour
1 cup flaxseed flour
2 eggs
1/3 cup half and half
1/5 cup coconut oil and 1 tsp coconut oil
Pinch of baking soda
½ cup cottage cheese
1 mashed banana
½ cup of frozen cherries (defrosted)
Instructions:
1 In a bowl combine and mix almond flour, flaxseed flour, 2 eggs, 1/5 cup coconut oil and half and half. This is your crepes batter. Consistency should be liquid
2. Heat a small sized skillet with coconut oil
3. Pour about 1.5 tbsp of batter onto skillet and move it around so the entire bottom is covered in batter
4. Turn heat to low/med and cover the skillet. Allow to cook for about 1 min, then flip carefully with spatula
5. Repeat for remaining batter
6. In a bowl mix together cottage cheese and mashed bananas
7. Take each crepe and spoon about 2 tsps of cottage cheese and bananas mix in the middle, then place 2-3 cherries on top of mixture and roll the crepe
8. Repeat for remaining crepes
For the topping I blended some cherries, blueberries and 1 tbsp half and half
