Breakfast squash

stuffed squash

This is a nice twist on breakfast or in my case brinner (breakfast for dinner). Its both sweet and savory so its an interesting combination of flavors.

Ingredients:
1 acorn squash sliced in half (take out the seeds)
2 tsps coconut oil
2 eggs
1 apple
Paprika
Basil
Cinnamon

Instruction:
1. Preheat oven to 375
2. Place the 2 squash halves on a baking sheet and put a tsp of coconut oil into each half
3. Place in oven for 40 minutes
4. Chop apple into small pieces and place onto cookie sheet
5. Sprinkle apples with cinnamon
6. Once the squash has been in the oven for 40 min, remove it and break 1 egg into each half of the squash
7. Sprinkle each egg with paprika and basil
8. Place the squash with the eggs and the apple with cinnamon back into oven for 20 more minutes
