Coconut cinnamon salmon

I’ve always made my salmon generally the same way, this time I decided to try a slightly sweeter alternative. It came out super yummy

Ingredients:
Salmon cut into 2 inch wide pieces
2 tbsp coconut oil melted
1/2 cup of coconut milk
1/2 cup coconut flour
1 tsp cinnamon
1 tbsp mint leaves (dried)

Instructions:
1. In a small bowl mix together coconut oil, cinnamon and coconut and pour the mixture into a baking dish
2. Place salmon (skin up, fish side into marinade) into the baking dish and let it marinade for 20 min at room temperature
3. Preheat oven to 350
4. Once the salmon has marinated (coconut mixture may harden slightly) flip the salmon with the skin side down
5. Pour a bit of coconut milk on each piece (like 1/2 tsp each) and sprinkle each piece with coconut flour and a dash of cinnamon and a bit of mint
6. Bake for 20 minutes (check the inside to make sure its cooked
