Cauliflower pancakes

cauliflower pancakes

Ingredients:
1 cauliflower steamed or boiled and mashed
2 eggs
1/3 cup almond flour
1 tbsp coconut oil
paprika, basil, salt and pepper to taste

Instructions:
1. Drain mashed cauliflower from residual water
2. Mix mashed cauliflower with eggs, almond flour and spices
3. Preheat a medium skillet on high with 1 tsp coconut oil
4. Use a tsp to scoop batter onto skillet and turn to heat to medium and cover
5. Cook pancakes on each side for about 2 minutes

** These are savory, not sweet. So you can have them as a side dish, on their own, with meat, chicken, fish etc…
