Beef and veggie stirfry

beef stir fry

Beef (the package should say stir fry; or just buy beef tips)
2 tbsp coconut oil melted
3 tsps garlic minced
1/2 cup of chopped fresh dill
Salt, pepper
Juice of one lemon
1 bell pepper (chopped into 1 inch pieces)
1 yellow onion (finely chopped)
1/4 cup chopped scallions

1. In a large bowl combine beef, coconut oil, garlic, dill, salt, pepper and lemon juice. Mix it up well and allow it to marinate for 30 minutes at room temperature
2. Heat a large skillet with a bit of oil
3. Add onion to skillet and allow it to fry on med/high heat while stirring occasionally
4. Once onion is golden, add bell pepper and cover
5. Allow that cook on medium heat for 5 minutes
6. Add the beef to the skillet and change heat to med/high. Add scallions after about 2 minutes
7. Stir frequently for about 3-4 minutes or until the meat is no longer bloody. Slice a piece to check
8. Enjoy!
