Cauliflower crust pizza

cauliflower pizza

Ingredients:
1 cup cooked (steamed or boiled) and mashed cauliflower
1 cup grated mozzarella cheese
1 egg
Tomato sauce or puree
Ricotta cheese (3-4 tsp) for small dollops on top
Veggies of choice/ toppings of choice
1/3 cup mozzarella cheese (for topping)

Instructions:
1. Preheat oven to 450 degrees
2. Combine cauliflower, egg and cheese and mix well
3. Grease a baking sheet or line with parchment paper (don’t use greased foil, it sticks to it and is hard to get off)
4. Spread the cauliflower mixture over the baking sheet so its about 3/4- 1 inch thick and about up to 8-9 inches wide to make crust
5. Place in oven and bake for 15 minutes
6. Remove from oven and place tomato sauce and toppings of choice on top of the crust
7. Place back in oven for 2-3 minutes
8. Enjoy!

*Special note on this recipe – don’t change the proportions for the crust, if there is too much cheese it will burn, not enough cheese and it won’t stick together. Extra eggs make it runny and not enough cauliflower make it more of an omelet. I tested 3 batches, so learn from my mistakes 🙂
