Bagels! (Low glycemic and paleo)

Oh yes these are low glycemic, paleo and gluten free. Get excited. You will need a donut baking dish sold on amazon for $9 (http://www.amazon.com/gp/product/B004CYELOQ/ref=oh_details_o01_s00_i00?ie=UTF8&psc=1)

Ingredients:
2.5 cups almond flour
1/2 cup flaxseed meal
1/2 cup coconut oil
5 eggs
pinch of baking soda
pinch of salt
toppings of choice (garlic, poppies, salt, thyme etc…)

Instructions:
1. Preheat oven to 350
2. In a large mixing bowl combine all ingredients except toppings
3. Mix well until the consistency is slightly softer than regular dough
4. Grease the bagel/donut pan with butter or coconut oil
5. Carefully spoon the mixture into each form so it makes a uniform circle
6. Sprinkle with toppings of choice
7. Bake for 20-25 min

These slice like regular bagels and as you can see you can put some nice lox and cream cheese on them 🙂
