Ingredients:
1 cup quinoa
1.5 cups water
1 tbsp coconut oil
1 small mango chopped
Instructions:
1. In a pot combine water, quinoa and coconut oil
2. Bring to a boil and then reduce heat to med/low and cook for 15 min
3. Add mango pieces to quinoa and cook for another 5 minutes or until quinoa is fluffy
Enjoy with coconut curry chicken with mango and almonds!
