Spinach and cheese tarts

spinach tarts
3 packs of frozen chopped spinach (let it thaw)
1.5 cups of half and half
3 eggs
1.5 cup shredded mozzarella cheese (or any cheese you like)
Salt and pepper

1. Preheat oven to 350
2. Place spinach in a pasta drainer and squeeze out as much water as possible
3. In a large bowl mix together spinach, half and half and eggs
4. Add cheese to the same bowl and mix together
5. Season with salt and pepper to taste
6. Scoop mixture into a muffin tin
7. Bake for 30-35 minutes (until top is golden brown)
