Roasted veggie salad with goat cheese and smoked salmon

5-6 Mushrooms (sliced)
1 yellow pepper (sliced)
2 cups of fresh spinach
3/4 cup cherry tomatoes
1/4 cup sliced almonds
3 tbsps goat cheese
Smoked salmon

1. In a warmed skillet combine mushrooms, yellow peppers and tomatoes and cook for 10 minutes while stirring once in a while
2. Add spinach and almonds and cook another 3-5 minutes or until all vegetables are softened
3. Serve with goat cheese and smoked salmon
