Meat stuffed potato skins

This recipe came about from a random question from the person who is my frequent guinea pig for new recipes: What else can you stuff other than peppers and mushrooms? So this my healthier version of comfort food. This can work as an appertizer or meal

Ingredients:
2 large potatoes
1 and 1/2 cups of ground meat (i use turkey and beef mixed)
1 egg
1 tbsp olive oil
2 tbsps cup fresh cilantro chopped
1/2 tsp onion powder
1/2 tsp basil
1/2 tsp paprika
1/4 clove of minced garlic
Salt and pepper to taste

Instructions:
1. In a large bowl mix together meat, egg, olive oil, onion powder, basil, paprika, garlic, salt, pepper and cilantro. Allow to marinate 30-40 minutes at room temperature or overnight in the fridge
2. Preheat oven to 375 degrees
3. Wash potatoes and poke a few holes in them with a fork. Place them on baking dish and allow to bake for 40 minutes (turn them over around 20 minutes)
4. Once the potatoes are baked take them out and cut them veritically in half. Scoop up most of the potato from each half with a spoon so only the skin and a bit of potato flesh is left
5. Spoon the meat mixture into each potato half
6. Place in oven for 20-25 minutes

*** if you don’t want to bake the potatoes for 40 minutes in the beginning you can microwave them for 5 minutes on each side (10 min total) and then folow steps 4-6***

*** you can use the potatoes you scooped out for something else: mashed potatoes, potato salad, soup etc…***
