This is a great and easy soup. All in a crockpot
Ingredients:
2-3 boneless and skinless chicken thighs
1 carrot chopped
1/3 cup green onions chopped
1/4 cup half and half
1 cup milk (coconut milk is preferred)
1 cup water (or chicken broth)
2 tbsp coconut oil
2 tsps curry
2 tsps grated ginger
2 tbsp lemon juice
Salt, pepper to taste
1. Combine all ingredients in a crockpot. If you have a larger crockpot add more milk and water in equal proportions
2. Turn crockpot to low and cook for 5 hours
