Pumpkin Apple Pancakes with almond maple cream

Apple pumpkin pancakes with an almond maple cream topping
Ingredients (pancakes):
  • 2 small apples grated
  • 3/4 cup canned pumpkin
  • 3 eggs
  • 2 tbsp sugar
  • 1/2 tsp baking powder
  • 1 cup of flour
  • 1/2 tsp cinnamon
  • 1/2 teaspoon pumpkin spice
  • 1/2 tsp vanilla extract
Instructions:
Mix the apples, pumpkin and eggs together. Add sugar, vanilla, spices and baking powder.  Mix in flour (preferably an electronic mixer if you have it). If it’s really thick add a little milk, if it’s really watery add a little more flour. It should be the consistency of puree.
Preheat pan and spray with Pam. Spoon mixture into pan, about 1tbsp per pancake. Cover and turn heat to medium. Flip after 1-1.5 minutes.
Ingredients (sauce):
  • 3 tbsp sour cream
  • 1 tbsp maple syrup
  • 1 tsp almond butter
  • 1 tsp half and half
Mix together and serve with pancakes.
