Lazy sunday pancakes

Well I think its safe to say I’ve refined the art of lazy pancakes. 3 ingredients. That is all! photo 1

Ingredients:
1 banana (mashed)
1 egg
2 tbsp almond butter

Instructions:
1. In a medium bowl combine mashed banana, egg and almond butter
2. Heat a skillet with some coconut oil or butter (I prefer coconut oil, it adds a bit of a different flavor to the pancakes).
3. Spoon the batter on to the skillet (~2.5in diameter). Change heat to 4/10 or medium. Flip after about 1 minute
4. Enjoy with some greek yogurt, honey and blueberries or topping of your choice!

This makes about 10-12 mini-pancakes
