Banana and apple protein pancakes

Of all the pancake recipes I’ve played with this is my new favorite, they taste kind of like banana bread

Ingredients:
1 egg
1 scoop protein powder (vanilla flavored)
1 tbsp cottage cheese or greek yogurt
1 banana (mashed)
1/2 apple cut into small pieces
1 tbsp coconut oil (or butter or olive oil)

Instructions:
1. In a bowl mix together mashed banana, egg and protein powder
2. Mix in cottage cheese and then apple chunks
3. Heat a medium skillet with 1 tbsp coconut oil (I recommend coconut oil because it adds a nice hint of sweetness and coconut to the pancakes, but other things will work too if you don’t have it)
4. Spoon about 1 tbsp of the mixture onto the skillet, turn the heat to low and cover
5. Flip pancake after about 1 minute (these cook pretty fast, so be careful not to burn them)
6. Enjoy!

*These were so good I made them again with blueberries instead of apples and that was even better!
