Strawberry cheesecake

Low glycemic

Ingredients:
1 pack of cream cheese
1.5 cups of fresh strawberries
3 eggs
1/2 cup of stevia
1 tbsp of coconut oil
1 cup of sliced strawberries (for topping)
1/2 cup coconut milk (optional)

Instructions:
1. Preheat oven to 350
2. In a blender combine cream cheese, 1.5 cups strawberries, 3 eggs and 1/2 cup stevia and blend
3. Grease a 9inch spring form with coconut oil and pour blended mixture into the form
4. Bake for 25-30 min
5. Once it cools for about an hour place slices of strawberries on top for topping (you can also combine strawberries and some coconut milk for a light sauce on top)

Since there is no flour in this cheesecake it will sink down (but if you cover it with toppings, no one will know 🙂 ) Also it tastes very light and mousse-like. So delicious!
