Ingredients:
5 bananas mashed
3 eggs
2 tbsp cocoa powder
2 tbsp coconut oil
1/4 cup stevia
2 cups sour cream
2 cups strawberries
1/4 cup stevia (yes another one)
3/4 cup sliced almonds
Instructions:
1. Preheat oven to 350
2. In a blender mix together mashed bananas, eggs, 1 tbsp coconut oil, 1/4 cup stevia and cocoa powder
3. Grease a brownie pan with 1 tbsp coconut oil and pour mixture into pan evenly
4. Bake for 25-30 min
5. Once baked, sprinkle sliced almonds on top of the entire cake
6. Allow it to cool for about 1 hour
7. Cut the cake vertically in half
8. In a food processor blend the fresh strawberries until they are relatively smooth.
9. In a small bowl mix together sour cream, stevia and blended strawberries
10. Spread the strawberry mixture over ONE HALF of the cake
11. Using a large spatula place the other half of the cake on top of the strawberry covered layer
12. Splash a bit more strawberry mixture on top of the top layer
13. Enjoy!
