This a variation on traditional chicken curry
Ingredients:
6 chicken thighs
2 tbsps mayo
1 egg
2 tsps curry
1/2 cup parsley
2 tsps basil
2 tbsp olive or coconut oil
Instructions:
1. Preheat oven to 350
2. In a large bowl mix together mayo, egg, curry, parsley and basil
3. Pour a little oil into baking dish. Coat each chicken piece with mayo mixture and place in baking dish
4. Allow chicken to marinate for 30 minutes at room temperature
5. Bake for 30 minutes or until chicken squirts clear juice
