This is a 10 minute microwave meal I threw together when I was hungry and didn’t want to wait 30-40 minutes
Ingredients:
5 small purple potatoes cut in half
1 tbsp of coconut oil
1/4 cup chopped cilantro
1 tsp of garlic powder
1 tsp minced garlic
1/2 tomato chopped
1 avocado cut in half
3-4 mushrooms sliced
1 tsp basil
Instructions:
1. In a medium bowl combine potatoes, garlic powder, cilantro and coconut oil and microwave for 2.5 minutes, then mix and microwave another 2.5 minutes
2. In a small bowl mix together tomatoes and minced garlic and spoon it into the avocado half. Microwave that for 30 seconds
3. Once the potatoes are done, place them on a plate and use the same bowl with the oil in it. Place mushrooms and basil in this bowl and microwave for about 1 minute
4. Boom. Done. I added smoked salmon and the combo was delicious
