IMG_3632This was really easy to make and quite yummy!

Ingredients:

Shrimp:

  • 1 lbs large peeled and deveined shrimp
  • 1/3 cup flour
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 2 cups of coconut flakes
  • 2 eggs beaten

Sticky rice:

  • 2 cups of basmati rice
  • 2 tbsp cream of coconut
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 mango chopped into 0.5 cm chunks

Instructions for shrimp:

  1. Preheat oven to 350 degrees
  2. Rinse and dry shrimp
  3. Mix flour, salt, cayenne pepper in shallow bowl
  4. Dip each shrimp into egg, then flour mix, then coconut flakes (makes sure to cover both sides thoroughly
  5. Place on baking sheet
  6. Bake shrimp for about 20 minutes or until they are pink and no longer transparent on the inside (flip at 10 minutes)

Instructions for rice:

  1. Combine 2 cups of rice and 2 cups of water, add salt and pepper
  2. Bring to boil in a pot and the turn down to low heat
  3. Cook for 15 minutes then add coconut cream and cook for another 5 min
  4. Stir in mango chunks and cook for 2-3 more minutes

Serve together and enjoy!
