Pumpkin apple cinnamon pancakes

These pancakes are perfect for fall, this is the first time I made them and they came out fluffy and delicious!

Ingredients:
1/4 apple diced finely
2 tbsp of pumpkin puree
3 tbsp oat flour
1 egg
1 tbsp half and half
2 tbsps sugar or stevia (to taste)
1/2 tsp cinnamon
pinch of baking soda

Instructions:
1. In a medium bowl mix together pumpkin puree and egg and mix
2. Slowly add flour and baking soda and mix in
3. Add half and half and cinnamon and mix
4. Add diced apples to the mixture
5. Heat a greased skillet on high
6. Once hot, spoon about 1-1.5 tbsps of batter onto skillet, turn heat to medium low and cover
7. Cook about 60-90s on each side
8. Enjoy!
