Berry cheesecake with a peach cream topping

So I am super proud of this cheesecake because after having made about 50 or so cheesecakes in my life I finally made one that didn’t crack at all!

Ingredients:
2 packs of cream cheese
1 cup stevia or sugar
1/4 cup almond flour
3 eggs
1 cup sour cream
1 cup raspberries and/or blackberries

For topping:
1 peach finely diced
1/2 cup sour cream
1/2 cup sugar or stevia

Instructions:
1. Preheat oven to 350
2. Place cream cheese into large bowl and microwave for 30 seconds (this will soften it a bit)
3. Add 1 cup sour cream and eggs to the bowl and mix
4. Add almond flour, 1 cup stevia and raspberries/blackberries and mix well
5. Bake for 30 minutes, then turn off oven and crack open oven door leaving the cheesecake in there for another hour
8. After an hour, close the oven door and allow the cheesecake to cool in there overnight for 5-6 hours
9. For the topping, combine 1/2 cup sour cream, 1/2 cup stevia and peaches
10. Enjoy!
