This is what would happen if a stuffed pepper had a baby with a burger.

Ingredients:
4 portabella mushroom caps
2 bell peppers
1 yellow onion
2 tomatoes
7-10 fingerling potatoes
2-3 lbs of ground turkey, ground beef or a mix of both
2 eggs
1/2 cup of chopped green onions
Basil, salt, pepper
2 tbsp olive oil

Instructions:
1. In a large bowl combine 2 eggs, ground meat (I used half turkey half beef) and mix well
2. Add chopped green onions, basil, salt, pepper and 2 tbsp olive oil and mix well
3. Set this aside to marinate for 45 min- 1 hour at room temperature or overnight in the fridge
4. Preheat oven to 375
5. Chop peppers, tomatoes and yellow onion
6. In a large baking dish, add a bit of olive oil to grease the bottom and add the chopped veggies and potatoes
7. Place veggies in oven for 20 minutes
8. Once the meat is marinated, scoop it into each Portobello mushroom cap
9. After the veggies have baked for 20 minutes, remove the baking pan out of the oven and place mushroom caps with meat on top of the veggies
10. Bake another 30-45 minutes at 350. If your meat patties are about 2 inches thick it will take about 45 minutes, so if they are thinner adjust accordingly
11. Enjoy this twist on a stuffed pepper/burger!
