Ingredients:
1 cup almond flour
1/2 cup soy flour
1/4 cup flaxseed meal
1/4 cup coconut flour
1/2 cup coconut oil
2 eggs
1/5 cup stevia
1/3 cup half and half
Fruit of choice (I used apples, cherries and blueberries)
Cinnamon
Instructions:
1. Preheat oven to 350
2. In large bowl mix all the flours then stir in eggs
3. Add half and half and coconut oil
4. Grease a baking sheet
5. Take about 1 1/2 tbsp of dough and form a ball with your hands
6. Press ball into a flat circle on the baking sheet
7. Place fruit of choice in the middle of circle (if using pitted cherries use about 3 cherries per Hamantaschen, if using apples chop them to about dime sized and place 3-4 pieces in each one)
8. Fold dough on 3 sides to make triangular shape
9. Repeat process for the rest of the dough
10. Sprinkle with cinnamon
11. Bake for ~ 12-15 minutes or until edges are golden
*You can adjust flour proportions here, you can use all almond flour or mix together several different kinds as long as all together it makes about 2 cups. I mixed flour mainly because I didn’t have enough almond flour left over
