Blackberry pie

1.5 sticks of butter (softened)
3 cups of flour
Pinch of salt
Vanilla extract
4 eggs
Pinch of baking soda
½ cup sugar
¼ cup milk
4-5 cups of blackberries (you can use a mix of blackberries and raspberries too)
1.5-2 cups brown sugar

1. In a large skillet combine blackberries and brown sugar
2. Once the blackberries and sugar heat up, change to low/med heat and cover. Cook for 30 minutes (until it gets relatively thick)
3. Set aside to cool for about 20-30 minutes
4. Preheat oven to 350 degrees
5. In a large bowl, combine 3 eggs, sugar, butter, salt, and vanilla extract
6. Slowly add flour to the mix until the dough is thick and not liquid in consistency (add more flour if needed)
7. Press the dough into a 9’ springform pan. Make sure you leave about half the dough for later
8. Pour blackberry mix into the springform pan
9. Using a rolling pin roll out the remaining dough to the size of the springform pan
10. Carefully cover the blackberry filling with the rolled out dough and pinch the dough together with the bottom layer of dough
11. Beat the remaining egg, then dip a folded paper towel into the egg and gently spread the egg uniformly over the top of the pie dough
12. Bake for about 45 minutes
13. Serve with a scoop of vanilla ice cream
