Ingredients:
1 cup quinoa
1.5 cups water
Olive oil
1/2 cup walnuts chopped
1 clove garlic (minced)
Scallions chopped (1/3 cup)
1 carrot (chopped or grated)
Pinch of salt and pepper
Instructions:
1. Heat olive oil in skillet
2. Add walnuts and cook for 2-3 minutes
3. Add garlic and cook for another 1-2 minutes then set aside, but keep warm
4. In a small/med pot combine quinoa and water and bring to boil
5. Once it boils, reduce heat to low and add carrots
6. Cook for about 10 minutes (until it gets fluffy)
7. Combine quinoa with walnut/garlic mixture, add scallions and stir it well on low heat for about 1 minute
