Rosemary lambchops with cranberries


Lamb chops
Olive oil
Raspberry salad dressing/vinegrette
3 tbsps Rosemary
Basil (optional)
Fresh or frozen cranberries

1. In a baking dish mix together olive oil and raspberry dressing in a 1:1 ratio to coat the bottom of the dish with about 1/4-1/2 inch of marinade
2. Add rosemary, salt, pepper and basil to baking dish and mix
3. Place lamb chops in marinade.
4. Flip the lamb chops so both sides are well coated
5. Leave to marinate for 1 hour at room temperature. Flip the chops again at about 30 minutes
6. Preheat oven to 375
7. Once the lamb chops have marinated add cranberries to me baking dish and place 3-4 cranberries on top of each lamb chop
8. Place in oven for 8 minutes
9. Remove from oven and flip the lamb chops over
10. Place back in oven for another 8 minutes
11. Serve the best lamb chops ever
