Roasted Potatoes

Ingredients:
10 small red/purple potatoes (these are low glycemic index)
1/2 cup of chopped fresh dill
3 tbsp olive oil
2 tbsp minced garlic
1/2 tsp salt and pepper

Instructions:
1. Preheat oven to 350
2. Combine all ingredients in large baking pan
3. Bake for 60 minutes
