Nested eggs

nested eggs 2

These are really easy to make. They come out beautiful and delicious! I made these last year for Father’s day 🙂

Ingredients:
Deli meat of your choice (ham, turkey, roast beef)
Eggs (however many you want to make)
Salt
Pepper
Basil

Instructions:
1. Preheat oven to 350
2. Take each piece of deli meat and pat dry with paper towel (do not skip this! the eggs will come out watery if you do)
3. Once the deli meat is dry, place 1 or 2 slices into each compartment of a muffin tin, so that the bottom and sides are well covered
4. Crack an egg directly into each muffin compartment
5. Sprinkle the eggs with basil, salt and pepper
6. Bake for 20-25 minutes

~You can make a scrambled version too, but these take about 10 minutes longer to bake~
